This is a fun, filling, and tasty recipe that the whole family will enjoy.
Low-Carb High-Fat Meatloaf Surprise
1/2 onion, chopped
1/3 cup coconut flour
1 tsp black pepper
1 tsp salt
1 tsp chili flakes (optional)
4 raw eggs
2 tsp garlic powder
2 tsp onion powder
2 lbs ground beef
1 Tbsp ketchup
- Set aside three of the eggs, the ketchup, and half of the pepper
- Mix all the remaining ingredients together
- Press half the mixture into a 9″x3″ silicone loaf pan
- Make three egg-sized indentations, and crack one raw egg into each
- Season the eggs with the remaining pepper
- Form the rest of the meat mixture into a lid, and lay it over the eggs, sealing the edges
- Cover with foil and bake at 350°F for 60 minutes
- Spread the ketchup evenly over the top of the loaf
- Bake uncovered at 350°F for an additional 30 minutes
- Done when the internal temperature reaches 190°F
- Slice and serve with your favorite low-carb high-fat vegetable side dish
